Crispy Caesar Hot Honey Wings

These crispy wings, tossed in a bold Caesar-style sauce made by Dave’s Fire Foods for Lineage Provisions, are finished with a drizzle of hot honey for the perfect balance of savory, tangy, and sweet heat. Served with a rich black garlic ranch for dipping.

Main

  • Chicken Wing Ingredients:

    • 3 lbs chicken wings

      ¼ cup room temperature Lineage grass fed beef tallow

      6 cloves garlic

      1 tbsp garlic powder

      1 tbsp onion powder

      1 tbsp paprika

      1 tbsp chili powder

      2 tbsp salt

  • Caesar Ingredients:

    • ⅓ cup good quality mayo (we recommend Primal Kitchen Avocado Oil Mayo)

      2 tbsp dijon mustard

      3-4 anchovy fillets

      1 clove garlic

      1 small lemon juiced

      1 tbsp fresh dill, chopped

      1 cup fresh grated parmesan reggiano

      Salt and pepper to taste

  • Hot Honey Ingredients:

    • ¼ cup Lineage Provisions Raw Honey

      1 tsp cayenne pepper

      1 tsp chili flakes

Black Garlic Ranch Ingredients:

    ½ cup sour cream

    ¼ cup good quality mayo

    2 heads of black garlic

    2 tbsp fresh dill, chopped

    ½ lemon juiced

    2 tbsp buttermilk

    2 tbsp blue cheese crumbles

    2 cloves roasted garlic (optional)

  • Tools Needed

    • Air fryer (or oven)

      Hand blender (or food processor)

Instructions:

  • 1. Prep Wings:

    • Add ¼ cup beef tallow with 6 cloves of garlic to a small roasting jar or dish and roast in the oven at 400F for 1 hour.

      While that's roasting, add your wings to a large bowl and season with your mix of 1 tbsp garlic powder, 1 tbsp onion powder, 1 tbsp paprika, 1 tbsp chili powder, and 2 tbsp salt.

      Once your garlic is roasted, pour your melted tallow on your seasoned wings and mix well.

  • 2. Cook the Wings:

    • Cook your wings in an air fryer at 450F for about 30 minutes or until crispy and cooked through. If you don't have an air fryer, you can roast them in your oven at 425F for 30 minutes or until cooked through.

      Flip the wings roughly every 8 minutes until cooked.

  • 3. Make the Caesar:

    • In a small bowl add your ⅓ cup mayo, tbsp dijon, 3-4 anchovies, 1 garlic clove, juice from 1 lemon and 1 tbsp fresh dill. Blend well with a hand blender or food processor.

      Once blended, mix in your shredded parmesan reggiano and salt and pepper to taste.

  • 4. Make the Hot Honey:

    • Add ¼ cup Lineage raw honey to a small bowl and mix in your 1 tsp cayenne pepper and 1 tsp chili flakes until well combined.

  • 5. Make the Black Garlic Ranch:

    • To a jar or bowl add in your ½ cup sour cream, ¼ cup mayo, 2 heads of black garlic, 2 tbsp chopped dill, ½ of a lemon juiced, 2 tbsp buttermilk, 2 tbsp blue cheese, and 2 cloves roasted garlic, if using.

      Blend with a hand blender until smooth and serve with your wings.

  • 6. Serve:

    Add your wings to a large bowl and toss in your Caesar until fully coated. Serve them on a plate and drive your hot honey over top. Then pour your Black Garlic Ranch into a dipping bowl to serve alongside your wings!

Tips:

    Once you roast your garlic in your beef tallow let it cool for about 10 minutes before pouring over your wings so it doesn't heat up your wings before air frying.

    When blending your caesar ingredients together, make sure you are using a small bowl if using a hand blender. This will ensure everything gets evenly blended.

    Take your wings out of the fridge for about 15 minutes before airfrying them and dry them off with a paper towel - this will help them get crispier!
